Quinoa-Stuffed Roasted Squash

This delicious, quinoa-stuffed squash will end your search for a truly tasty, vegetarian dinner! It’s also super-easy to make.

Ingredients:

  • 2 medium acorn squash (about 1 1/2 lb each)
  • 1/2 cup uncooked quinoa, rinsed, well-drained
  • 1 cup vegetable broth
  • 1 tablespoon olive oil
  • 1/3 cup sliced green onions
  • 1/4 teaspoon finely chopped garlic
  • 1/4 teaspoon dried rubbed sage
  • 1/4 cup sweetened dried cranberries
  • 1/4 cup coarsely chopped pecans, toasted
  • 1/2 cup cannellini beans, drained and rinsed
  • 1/2 teaspoon grated orange peel
  • 2 tablespoons coarsely chopped fresh parsley

Instructions:

1. Heat oven to 375° F. Spray 15 x 10 x 1-inch baking pan with cooking spray. Cut each squash lengthwise in half; remove seeds and fibers. Cut a 1/8-inch slice from
the bottom of each half so the squash will sit flat in step 4. Place squash, cut sides down, in pan; bake 30 minutes.

2. Meanwhile, in a 1-quart saucepan, heat quinoa and broth to boiling; reduce heat to low. Cover and simmer 15 minutes or until all liquid is absorbed.

3. In 10-inch skillet, heat oil over medium heat. Cook onions, garlic and sage in oil about 5 minutes, stirring occasionally until onions are crisp-tender;
remove from heat. Add cranberries; stir until coated. Stir in cooked quinoa and all remaining ingredients except parsley until blended.

4. Remove squash from oven; turn squash, cut sides up. Divide quinoa mixture evenly among squash halves, pressing down on filling to form a slight mound over
the cavity. Cover loosely with foil. Bake 30 minutes longer or until squash is tender and filling is thoroughly heated. Sprinkle with parsley.

Cut the watermelon into pieces and remove the peel. Mix all the ingredients in a processor and process until obtaining a homogeneous consistency. Pour the watermelon liquid into a shallow pan and put it in the freezer for an hour.

Simple way to cook Tilapia with Creamy Wine Sauce

Ingredients:

  • two half-and-half cups
  • one Cup of water
  • 1/2 cup of dry white wine or water
  • two teaspoons grated lemon peel
  • one Tuna Helper® Creamy Broccoli Mix Box
  • one lb tilapia fillets or fillets from other fish with a mild flavor, about 3/4 of an inch thick
  • one egg
  • one tablespoon of water
  • 1/3 cup Progresso® Garlic & Herb Bread Crumbs Garlic & Herb Breadcrumbs
  • two tablespoons of olive oil or vegetable oil
  • one tablespoon fresh chopped Italian parsley (flat-leaf)

Instructions:

1. In a 2-quart saucepan, heat half-and-half, 1 cup water, wine, lemon peel, uncooked pasta, and Tuna Helper® sauce mixture until simmering. Lower the flame;
Uncover and simmer 12 to 14 minutes, stirring occasionally, until pasta is tender.

2. Meanwhile, cut the fish fillets into 4 pieces. In a shallow bowl, beat the egg and 1 tablespoon of water with a fork until mixed. In a shallow dish, place the
breadcrumbs. Dip each piece of fish in the egg mixture and then cover it completely with the breadcrumbs.

3. In 10-inch skillet, heat oil over medium-high heat. Add the fish; fry for 6 to 10 minutes, turning once, until fish flakes easily by inserting a fork and
browning on both sides. Transfer the pasta mixture to a platter; cover with fish. Garnish with parsley and lemon wedges.

How to prepare Frozen Lemon Pie

Ingredients:

  • 1 1/4 graham cracker or crumbs for pie
  • 1/3 butter or margarine, melted
  • 1 1/2 cups vanilla soy milk
  • 1/2 Sugar cup
  • 1/4 cup cornstarch
  • 1/2 teaspoon lemon-lime or key lime zest
  • 1/4 cup lemon juice or key lime type lemon
  • one container (8 oz) vegetable cream (pre-whipped) fat-free (frozen whipped topping), thawed
  • A few drops of green food coloring

 

Instructions:

1. Preheat oven to 375 ° F. Mix the biscuit and butter; press into the bottom of 9-inch pie plate. Bake 6 to 8 minutes or until golden brown. Let it cool.

2. While mixing soy milk, sugar, cornstarch, zest, and lemon juice and mix in a saucepan until the starch is incorporated and there are no lumps. Heat over medium heat 5 to 6 minutes, stirring constantly, until bubbly and thick. Remove from heat.

3. Refrigerate for 30 minutes or until chilled, stirring constantly. Carefully and wrapping add 1 cup of the pre-whipped cream; add a few drops of green food coloring to a smooth green color. Add to the play deck.

4. Add the rest of the pre-beaten vegetable cream on top of the pie. Refrigerate for 2 hours or until firm.

A Bloody Mary Drink That is Delicious

There are some people who fight a hangover with the very thing that gave them one in the first place. While they may not use the same type of drink or quite the same amount, there are a lot of people that I know who will do a Bloody Mary mix and drink it when they are feeling the pains the morning after a hard night of partying. While I have never done this, I have seen others do it and swear that it makes them feel much better. I guess it is one of those things about fighting fire with fire!

Anyway, there is one particular kind of Bloody Mary mix that they like to use. It is made with something called Clamato rather than tomatoes. If you look at the word long enough, what it actually is might jump out at you! It is a mix of clam juice and tomato juice. I know that sounds like a weird combination, but don’t knock it until you have tried it. I may not drink this for a hangover, but I knew that I was going to be a fan the moment I tasted it.

This mix is added to vodka and the Clamato juice, and the end result is heaven on earth. It really is that tasty! When my friends and I would drink a Bloody Mary before, it was usually over a shared lunch somewhere. They did not happen that often, perhaps twice a month. With this mix that we now use, it is something that we all drink a lot more often. I still limit myself to how much I will drink, but it is too good to only have twice a month. It is also very easy to mix, and it does make the perfect gift too!
