Avocado Salad with Roasted Sweet Potatoes


10 Ingredients

2 Lb of sweet potatoes peeled and diced
4 olive oil spoons
Salt And black pepper, to taste
1/2 Cup of dried blueberries
1/2 Cup of fresh cheese, collapsed
1/4 Cup of walnuts, chopped
1/4 Cup of rooted nuggets
1 Ripe avocado, peeled and diced
1 Tablespoon cilantro leaves, chopped
Vinegar Maple (optional)

Preheat the oven to 400 F. Line a baking sheet with parchment paper.

Mix the sweet potato, olive oil, salt, and pepper. Place in the previously prepared tray and roast for about 20 minutes, or until sweet potato is tender. Remove from oven and cool slightly

In a large salad bowl, combine roasted sweet potatoes, blueberries, fresh cheese, nuts, pips, and avocado.

Garnish with chopped cilantro and garnish with maple vinaigrette, if desired. Then serve hot.
