The most fun in Easter time is the tradition of finding hidden eggs, painting them, and, of course, preparing stuffed eggs in a thousand ways. The favorite recipe for my daughters is the egg of devils with bacon and avocado. As a child, my mom used to stuff them with a mixture of mayonnaise, mustard, and ground ham, really delicious. But as always, I love to invent and create new recipes, and today I have a new one for you. My daughters help me in the kitchen in their spare time, and at any time of the year, we prepare endive eggs with a crispy touch of bacon and a few pieces of avocado to give that special touch. Aside from decorative, they are original and everyone likes, they are ideal for picnics, celebrations, or simply to satisfy a craving!

Tips to be a better Cook

Whenever my father comes home for lunch, tells me to learn something new in the kitchen, some little trick or seemingly silly advice, but it helps you a lot at home then. The funny thing is that I think of the same thing when I go to yours and gossiping while cooking, so I’ve tried to gather all the mini wisdom in these tips to be a better cook (if possible).

Some of you will look foolish advice and others will be obvious, but I’m sure you will find a few that seem developers, and with that I am satisfied. Moreover, as I am not omniscient, I am convinced that you have many more to contribute in the comments. Ah! And they are not in order of importance, but as I have been coming to mind.

1. Sharpen your knives

Because there is nothing more hateful (and dangerous) to try to cut with knives without sharpening. So a good sharpener or, better yet, make that a professional sharpening from time to time. You’ll see how wonderful.

2. Always use extra virgin olive oil

Because of the price difference, you get the oil of much higher quality, better resists temperatures and over time, it is healthier and, go, is much more good and tasty. And if new harvest long story.

3. Purchase quality salt

Skimp on the salt does not make sense. Even the most expensive of the salts have a negligible impact on the cost of a meal and walk that does not change a salad, toast, or a piece of meat with a salt flake quality.

4. Freeze the bread and sliced

And so you can thaw just the right amount you want and directly into the toaster. There ‘s nothing like a good toast bread in the morning without having to go down to buy bread or having to thaw a whole loaf.

5. Clear your kitchen bench

Unintentionally, things tend to accumulate on the counter. Pots, toasters, microwaves, coffee machines, grinders, blenders … we have so many things in the kitchen just having to peel and cut potatoes into a corner. Clear your kitchen, keep everything not use daily, and will work much more comfortable.

Best Chinese Restaurants in the U.S.

You’ll find restaurants setting the bar higher in immigrant enclaves like New York City’s Flushing neighborhood and California’s San Gabriel Valley, but also in Vermont, Chicago, and Salt Lake City. Some are family-owned, hole-in-the-wall joints.

New York has relatively little Hong Kong influence.

1. Koi Palace, Daly City, California: Hong Kong-style restaurant specializing in dim sum at lunchtime and Hong Kong-style seafood at dinner.

2. Peter Chang Cafe, Richmond, VA: The bold, exotic flavors will leave your tongue numb, especially if you opt for the Hot & Numbing Hot Pot, a combo of seafood, chicken, beef, and veggies submerged in a fiery red sauce. The oversize portions are meant to be shared and arrive on an as-ready basis

3. Ping Pang Pong, Las Vegas: you’ll find regional specialties from across China, from dim sum served on pushcarts (Cantonese) to salt-and-pepper frog legs (Sichuan) and double-braised scallop hot pot (found throughout China).

4. Elite Restaurant, Monterey Park, California: Serving dim sum off the menu and Hong Kong-style seafood. While dim sum carts are viewed by many as a more interesting experience, dim sum off the menu that is cooked to order provides a fresher and higher quality product.

5. Lunasa, Alhambra, California: Hong Kong-style seafood restaurant. Innovative dim sum items include foie gras dim sum.

6. Lao Sze Chuan, Chicago: Yet people continue to wait in line for a table at this Sichuan spot, known for its extraordinary spiciness and fearless dishes like sour pickle and pork stomach soup and Peking-style duck tongue

Cheese and Zucchini Pupusas

Cheese pupusas have been one of my favorites ever since I was a child. When cooking the pupusas, the cheese melts and mixes wonderfully with the soft tortilla dough that surrounds it and which becomes one of the traditional favorite foods in El Salvador and other Central American countries. The corn used to make the pupusas is nixtamalized, which gives it its characteristic flavor and texture. This time combine the cheese with grated zucchini to make different but equally tasty pupusas.

  • one zucchini
  • 1/2 pound of grated cheese Salt
  • 3 cups tortilla dough

1. Grate the zucchini and combine it with the grated cheese and salt. Knead well and let it rest for a few minutes.

2. Using 1/2 cup portions of dough, make tortillas.

3. Place portions of the filling in the center, about 1 tablespoon.

4. Close and pat, moistening hands, if necessary, to make pupusas.

5. Cook in a hot skillet and serve with tanning.

Cooking Egg with Tomatoes and Tortillas

Cooking anything with egg always reminds me of the three women with the most impact in my life: my mom, my grandma, and my mother-in-law who were experts with egg recipes. My mom and granny loved this. Every time we went out to breakfast at a Mexican restaurant, they always asked for Egg-based foods. This also reminds me of my mother-in-law because it was the first breakfast she made the first time she visited us in the United States. I still remember the smell of tomatoes and chilies roasting on the griddle for the sauce. Delicious! This recipe is how my mother-in-law prepared it on that visit.

  • one lb tomatoes
  • two chilli
  • 1/2 medium onion
  • one garlic clove
  • Salt and pepper to taste
  • 3 tablespoons of vegetable oil
  • 6 Corn tortillas
  • 6 eggs

1. Roast the tomatoes, chilies, onion, and garlic on a griddle over medium heat, until they start to singe. Remove from heat and transfer to a blender glass. With great care, blend the roasted tomatoes, chilies, onion, and garlic until well ground. Pour the sauce into a small saucepan and season with salt to taste.

2. In a nonstick skillet heat 1 tablespoon of vegetable oil over medium heat. One by one, brown the tortillas in the hot oil for about 30 seconds on both sides, adding more oil when needed.

3. In the same pan, cook one or two eggs to taste (steamed or scrambled) in a drizzle of vegetable oil; season with salt and ground black pepper.

4. To serve, put one of the golden tortillas on a plate. Place one of the eggs on top of the omelet and bathe in the sauce.

Enjoy your Sunday with Mexican Red Enchiladas

The red enchiladas remind me of those vacations we enjoyed as a family in Cuernavaca, Mexico. The dish is so named because the sauce is made from tomatoes and dried red chili peppers with spices. It is a simple but very tasty recipe. Enchiladas are a very old dish that dates back to the time of miscegenation. You can find different versions in each of the States of the Mexican Republic, with variations in the ingredients but the constant is always the omelet, the sauce, and the cheese. All delicious ingredients, so … Let’s cook!

  • 4 cups shredded quesadilla cheese (the one that strands when melted and creamy)
  • 12 corn tortillas (3 tortillas per person)
  • Oil (corn or safflower) to fry tortillas
  • 5 dried guajillo chiles
  • 3 dried ancho chiles
  • one medium red tomato
  • 4 garlic cloves
  • one medium white onion
  • one tablespoon ground cumin
  • one chicken bouillon cube
  • two cups of water
  • salt and pepper to taste
  • one cup white onion, finely chopped
  • one small onion to decorate
  • 4 Chinese parsley florets to decorate
  • one cup of cream to serve

1. Preheat oven to 350 ° F.

2. For the red sauce, place two cups of water and add the dried chilies without the stem and seeds, the tomato, the onion, and the garlic in a saucepan or pot over medium to medium-high heat. Cover the pot or saucepan and cook for 20 minutes or until the dried chiles are soft. When ready in the blender, blend all the ingredients, including salt, cumin, a cube of chicken stock, and 1 cup of the water, being careful not to add too much as the sauce should be thick. Strain and store in a container for later use.

3. Fry the tortillas lightly without browning and place on a separate plate until ready to prepare the enchiladas.

4. To assemble the enchiladas follow this process:

5. Take a small oven pot that allows you to include 3 enchiladas per person. Start with the first omelet, fill it with a little grated cheese and chopped onion, add a little red sauce, fold and carry out the same process for the next two enchiladas and the rest of the portions.

6. When ready, coat each serving generously with the red sauce, add and sprinkle with grated cheese. Bake for 15 to 20 minutes until cheese is gratin. Garnish with fresh cream, white onion slices, and a Chinese parsley floret.

These cassava fritters are very traditional in Venezuela during Easter. My grandmother used to make them and they were delicious. Simple to cook Potato Omelette recipe

The omelet for me will always be linked to my Aunt Gela, who is Spanish of pure strain, it was she who taught me how to prepare it in Madrid, she is already a very old lady who can hardly move, despite this, she taught me how to prepare the omelet with great enthusiasm. I learned that a few ingredients and a simple but impeccable technique can produce very appetizing results. In Spain, the potato omelet is everywhere. It is served as a snack, as a sandwich filling, as a starter with a green salad, or as a light meal. It is a dish that everyone loves and with which you always look good. I hope you like this recipe and that you enjoy it. The advantage is that you can do it with some anticipation because it is perfect at room temperature. Since I was hungry just to write these lines.

  • two lb of potatoes (Yukon Gold type)
  • one medium yellow onion
  • one cup olive oil
  • 9 eggs
  • 1/4 cup of milk
  • Salt and pepper to taste

1. Wash and peel the potatoes. Cut them in half lengthwise and then very thin slices across the width. The thickness doesn’t really matter much, but the thinner
they are, the faster they will cook. Reservation.

2. Peel and cut the onion in half and then into thin slices. Combine with potatoes.

3. In a large skillet over medium heat, heat a cup of olive oil. Add the potatoes and onions and spread them in a layer. Cover the pan and cook half-covered for
about 20-30 minutes, turning the potatoes occasionally and without letting them brown. When they are ready, turn off the heat and remove the potatoes and
onions from the pan, draining the oil.

4. In a large bowl beat the eggs with the milk, salt, and pepper. Combine with the potatoes and onions and let stand a few minutes.

5. Here you can decide whether to make a single large omelet or divide it into two or three smaller parts. Heat 1/4 cup oil in a skillet and pour the potato and
egg mixture. Cook over medium-high heat, shaking the pan occasionally and running a spatula around the edges to push the potatoes to the center, so the egg
runs under the tortilla. After about 5 minutes, reduce the heat to medium-low and cook until the center of the tortilla is almost set.

6. Put a plate on the pan. Put on oven protectors and quickly flip the omelet, complete with pan, so that it falls onto the plate. Put the skillet back on the
heat, add a little more of the oil and slide the tortilla from the plate to the pan. Finish cooking over medium-low heat until you have the point you prefer.

7. When it is ready, turn it over on the plate where you are going to serve it and take it to the table.

8. Serve with your favorite accompaniments.
